Will anyone explain the difference and when it would be appropriate to use which?

AI Servo is for tracking motion
AI Focus is like one-shot and AI Servo all in one setting, when it scenes motion it will switch from one-shot to AI Servo to track the motion.

Thanks Scott... So it would be a good idea to normally use AI Focus for the majority of shots...?

Last weekend I was shooting an Airshow... So I guess for the most part I'd be shooting regular and action. To avoid going back and forth I thought using AI Focus on a regular basis would be more appropriate?

If your shooting still life/landscapes that aren't moving I would shot one shot. If your shooting something that is still and could start moving then AI focus. If your shooting something that is already moving then AI Servo. This is just my .02, not meaning these are right for all instances.
